Granola with Pastry Standards

We built Butterbar to reject dry cereal compromises. Every batch begins in heavy copper pots with cultured Grade-AA creamery butter, cooked over flame until deeply caramelized and rich.

Oven Discipline

Slow-Baked Sheet Pans

Granola behaves like viennoiserie when given proper kitchen respect. We melt cultured butter slowly, watching the milk solids toast from pale cream to deep amber before tumbling in whole rolled oats and pecans.

Trays enter low-heat ovens in micro-batches of twenty. We pull them the minute the edges bronze, letting the residual heat fuse each cluster without scorching the delicate maple syrup.

Hand-Cracked Trays

Cultured butter simmers in thick-bottomed pots until the foam subsides and toasted hazelnut aromas fill the bakery.

Thick rolled oats and raw halves of Georgia pecans are coated gently while the amber butter remains molten warm.

Trays bake flat and undisturbed at three hundred degrees, allowing natural sugars to caramelize into thick, interlocking sheets.

After a two-hour ambient cool down, we fracture each slab by hand into sturdy, irregular clusters that hold their crunch.

Morning Table

Breakfast should feel like a celebration, not a disciplined chore. When you bake with real butter and patience, a handful of clusters transforms the entire morning.
